Opened this on a random Tuesday night and the 18 months on lees gives it this creamy, biscuity depth that made me slow down and actually taste it. It's got a lovely fine fizz that lingers without being sharp, perfect for a quiet toast.
The 96% Pinot Noir gives it such a delicate red-berry lift, and the fine lees ageing makes the mousse feel properly creamy. Poured it for friends last weekend and we finished the bottle way faster than planned.
The 18 months aging on lees really shows—the bubbles are fine and creamy, with that toasty depth you'd expect from a much pricier bottle. Popped it for a Tuesday night and it made it feel like a celebration.
